Coronation Chicken

Dine like a Queen tonight and impress your loved ones with this royal-worthy meal made with tender chicken, seasoned with heartwarming spices such as cinnamon and turmeric, delicately sweetened with plump apricots, and garnished with rich tangy feta cheese or a handful of crushed nuts. This popular British dish is traditionally made with heaps of mayonnaise but if you can’t find a clean brand like Primal Kitchen, or you’re like me and prefer the subtle taste of crème fraiche instead, go for it. I prefer to enjoy this meal warm, but it can also be enjoyed as a chilled salad.

Ingredients
- 10 organic honey gold bite-size potatoes, washed
- 3 Tbsp. Dr. Cowan’s Garden A2/A2 Ghee, melted

1/2 tsp. Dr. Cowan’s Garden Pepper Salt (or to taste)

1 tsp. Dr. Cowan’s Garden Zesty Garlic Organ-Based Seasoning

1 tsp. Dr. Cowan’s Garden Wild Ramp Powder
- 12 dried apricots, thinly sliced
- 1 medium onion, peeled and sliced
- 6 boneless chicken thighs

1 tsp. Dr. Cowan’s Garden Pepper Salt (or to taste)

1 Tbsp. Dr. Cowan’s Garden All Purpose Organ-Based Seasoning

1 tsp. Dr. Cowan’s Garden Organic Turmeric Powder
- 3+ scoops creme fraiche or mayonnaise
- 1/2 tsp. cinnamon (optional)
- 2 Tbsp. feta cheese, crumbled (optional)
- 2 Tbsp. Dr. Cowan’s Garden Crispy Sprouted Almonds or Pecans, crushed (optional)

Directions For Potatoes:
Pre-heat oven to 350 degrees F.
Cut small potatoes into quarters.
Place potatoes on a baking tray with greaseproof paper and drizzle with melted ghee or olive oil.
Lightly season with Pepper Salt, Zesty-garlic Organ-Based Seasoning and Wild Ramp Powder.
Place potatoes in the oven and roast for 25-30 minutes or until soft.
When the potatoes are soft throughout and golden brown, remove them from the oven and set aside.
Directions For Chicken:
Thinly slice apricots.
Add sliced apricots to a bowl of hot water and let them soften until you’re ready to use them.
Peel and slice onion.
Place the chicken in a bowl and add the sliced onions.
Season the chicken and onions with Pepper Salt, All-Purpose Organ-Based Seasoning and Turmeric powder.
Place chicken and onions on a baking tray and roast for up to 45 minutes or until cooked throughout.
When the chicken and onions are cooked, remove them from the oven.
Chop chicken into bitesize pieces.
Add chicken mixture and potatoes to a large bowl or saucepan.
Mix in crème fraiche or mayonnaise, cinnamon, and apricots.
Add additional seasoning if necessary.
When you’re satisfied with the taste, garnish with crumbled feta or crushed almonds.
Serve with steamed vegetables or a green salad.
Recipe Note
Tips:
Turn over the chicken halfway through cooking time. The onions can be removed before the chicken is done or left to soak up the chicken juices.
If you want to marinate the chicken the night before, place the chicken in a glass storage container and season with the vegetable powders.
