Blé Marquis or Marquis Wheat is an heirloom variety developed in the early 1900s and is a combination of Red Fife and Hard Red Calcutta wheat. It is specially developed and prized for its breadmaking quality, with a high protein content and a delicious flavor. It is hand bolted (sifted) to remove the darker bran, and finely ground for superior texture and quality. With skill, this wheat variety will create the best loaf of bread imaginable.
Refrigerate Upon Receipt. Unopened packages stored at room temperature remain fresh for 2-3 weeks.
