Parsnips are an old-time vegetable that is often mistaken in early literature for carrots.  As with carrots, the plant concentrates all its energy, nutrients and phytonutrients in the root, as it eschews showy leaf, flower and fruit development.

The traditional herbal use of parsnips was as an aphrodisiac, most probably because of its ability to support healthy hormone function. Parsnips are high in minerals, anti-oxidants, vitamins and fiber.  In particular, they are a rich source of the mineral manganese, which is crucial for bone development.
