Pumpkin is loaded with carotenoids, which are the plant pigments responsible for pumpkin’s orange color. Carotenoids have anti-inflammatory and immune-system benefits and are sometimes associated with cardiovascular disease prevention.
The beta-carotene in pumpkin is converted by the body to vitamin A, which is essential to vision and normal growth and development.
Pumpkin is also a good source of Vitamin E, which contributes to strong immunity and healthy skin and eyes, as well as dietary fiber, thiamin, niacin and Vitamin B6. The delicious varieties we use in our powder include Sugar Pie, Hopi Blue and Jarrahdale.
Its concentrated pumpkin flavor is delicious in baked goods, such as pancakes, cookies and cheesecake, and a quarter-cup added to a cup of broth, along with seasonings, makes a delicious soup. Our favorite way to use it is added to cooked oatmeal topped with chopped walnuts and raisins and a splash of maple syrup.
