Our Charred Eggplant Powder is a mixture of three varieties of heirloom eggplants, six varieties of heirloom peppers (some sweet, some hot) and leeks, all grown organically.
The recipe was inspired by a traditional Middle Eastern blend that combined roasted eggplants with spices. We adapted the recipe by roasting the eggplants over an open flame, then drying them at low heat in our dehydrators, and finally grinding them together with equal amounts of our Pepper Salt and Leek Powder.

In addition to adding a robust, smoky flavor, this blend is packed with important antioxidants and phytonutrients that will enhance the nutritional content of your diet. In addition to the ability of leeks to help restore a healthy gut flora, the addition of the Pepper Salt increases the absorption of whatever nutrients are consumed in that meal. And eggplants are a good source of chlorogenic acid, which is one of the most potent free radical scavengers found in plant tissues.
