Better Billionaire Bacon
Jazz up your Summer salad with this healthy version of billionaire bacon. Glaze your cooked bacon with a mixture of Three-Beet powder, Turmeric and Raw Fermented Probiotic Hot Sauce for an extra kick. Feel free to enhance your glaze with natural sweeteners such as maple syrup or raw honey, or you can skip these ingredients and let the natural sweetness of the beets shine through; either way works. When you’ve finished glazing the bacon, use it as a topping for your salad, or mix it together with other salad ingredients such as cottage or feta cheese, avocado, and butter lettuce, and serve immediately.

Ingredients
1 package bacon, approx. 10 - 12 slices

2 Tbsp. Dr. Cowan’s Garden Organic Three Beet Powder

1/2 tsp. Dr. Cowan’s Garden Organic Turmeric Root Powder

1 tsp. Jaya Raw Fermented Probiotic Hot Sauce

1 Tbsp. Dr. Cowan’s Garden Balsamic Vinegar
- 3 Tbsp. filtered water
- 1 tsp. maple syrup or raw honey (optional)
- 1 head butter lettuce, washed and chopped
- 1+ cup watercress, (optional)
- 3 scoops cottage cheese or crumbled feta cheese
- 1 medium avocado, diced
- 1 tsp. Dr. Cowan’s Garden Organic Summer Savory Powder

1 tsp. Dr. Cowan’s Garden Low-Oxalate Greens Powder

Handful Dr. Cowan’s Garden Crispy Sprouted Organic Pecans, crushed

Drizzle Dr. Cowan’s Garden Extra Virgin Olive Oil
Directions
Pre-heat oven to 350 degrees F.
- Arrange bacon on a baking tray lined with parchment paper and place in the oven for approximately 10-12 minutes.
- While the bacon is in the oven prepare the beetroot glaze.
- To a small mixing bowl add beetroot powder, turmeric powder, 3 Tbsp. filtered water, hot sauce, balsamic vinegar, and sweetener if you’re using it.
- Stir until smooth. This is your glaze.
- To a serving bowl add chopped butter lettuce, watercress, cottage cheese and chopped avocado, Summer Savory and Low-Oxalate Greens powder.
- When the bacon is cooked remove it from the oven and let it cool slightly.
- Remove excess fat.
- Use a kitchen brush and coat the cooked bacon with the glaze.
- Add glazed bacon to the salad mix, or tear into strips and mix into the salad.
- Top salad with crushed pecans and garnish with olive oil.
