Sweet Potato Hash

- 1-2 sundried tomatoes, sliced (optional)
- 1 medium sweet potato, peeled and diced

1-2 Tbsp. Dr. Cowan’s Garden A2 Ghee, melted
- 1 tsp. Dr. Cowan’s Garden Pluck All-Purpose Organ-Based Seasoning

2 tsp. Dr. Cowan’s Garden Organic Threefold Blend Powder - Savory
- 4-5 okras, sliced (optional)

Pinch Dr. Cowan’s Garden Organic Pepper Salt (for okras)

Dash Dr. Cowan’s Garden Balsamic Vinegar

1 tsp. Dr. Cowan’s Garden Olive Paste
- Several hamburger meat patties or 1/2 lb. ground beef, cooked and chopped
- Raw Probiotic Organic Sauerkraut - Carrot
- 1 heaping Tbsp. hummus
- 3 Tbsp. lemon juice

2 Tbsp. Dr. Cowan’s Garden Olive Oil

Pinch Dr. Cowan’s Garden Organic Pepper Salt

1 tsp. Dr. Cowan’s Organic Low-Oxalate Greens Powder
- 3-4 Tbsp. filtered water (if needed)

Directions For Hash
Pre-heat oven to 350 degrees F.
Slice sundried tomatoes and set aside.
Peel and dice sweet potato.
Spread on a baking tray.
Season with melted ghee, all-purpose seasoning, and 1 tsp. threefold blend powder.
Roast for 25-30 minutes or until golden.
Remove from the oven and set aside.
While the sweet potatoes are cooking, prepare the okra if you’re using this ingredient.
To a moderately heated pan or wok, add ghee and sliced okra.
Season with pepper salt.
Sauté for approximately 8 minutes or until tender but not mushy.
Add water to avoid them sticking to the pan.
Remove from the heat.
Add a dash of balsamic vinegar.
Dice cooked meat patties.
To a bowl, add diced sweet potatoes, sundried tomatoes, okra, olive paste, the other teaspoon of threefold blend powder, and diced patties.
Toss lightly.
Serve immediately and garnish with olive oil dressing, sauerkraut, or balsamic vinegar.
Directions For Olive Oil Dressing
To a small bowl add all the ingredients and mix well.
To achieve a pourable consistency, add 3-4 Tbsp. of water if needed
Recipe Note
You can hydrate sundried tomatoes by soaking them in boiling water for several minutes. The oil-packed version can simply be sliced after draining any excess oil.
