Week 10: Simple and Easy
This week was very busy for us, so I prioritized and planned the most simple and easy recipes for us. For me, a lengthy cook time doesn’t mean it can’t make it onto the menu. On the contrary, some of the easiest recipes to prep and make are also ones that take the longest to cook. A slow cooker (or fireplace stovetop) can produce extraordinary results. The Corned Beef recipe took approximately 8 hours in the slow cooker and pulled apart with ease. I have also been using my wood burning fireplace instead of the gas range or another appliance to do longer cooks, such as bone broth and the Ramen noodle dish, once the broth was done.

- 1 (4 to 5 pound) beef brisket or roast
- 1 whole chicken
- 4 boneless skin-on chicken thighs
- 1 lb ground beef
- 1 lb king salmon steak
- Sea salt
- ½ cup maple syrup
- 1 cinnamon stick
- Mustard seeds
- Black peppercorns
- 8 whole cloves
- 8 whole allspice berries
- 12 whole juniper berries
- 2 bay leaves

- 1 small onion

- 1 pint king oyster mushrooms

- 8 oz mochi
- 1 lbs butter
- 4 quarts chicken bone broth
