Lamb with Avocado Feta Salad

Enjoy succulent lamb chops paired with a refreshing light salad in less than 40 minutes. Season your lamb with Pluck All-Purpose Seasoning, Turmeric, Pepper Salt, and a dash of balsamic vinegar and place it in the oven for approximately 20 minutes. While your lamb is in the oven dice two avocadoes, crumble a chunk of feta cheese, and mix it with olive oil, Threefold Blend Savory Powder, and a pinch of Pepper Salt and serve immediately. If you prefer a warm salad with a slightly different flavor profile, replace feta cheese with slices of baked halloumi tossed in turmeric powder and brushed with ghee butter or olive oil.

4 lamb shoulder chops

1 Tbsp. Dr. Cowan’s Garden Pluck All Purpose Seasoning
- 1/2 tsp. Dr. Cowan’s Garden Organic Turmeric Powder

1/2 tsp. Dr. Cowan’s Garden Organic Pepper Salt

2 Tbsp. Dr. Cowan’s Garden Balsamic Vinegar
2 avocados, diced
- 1/4+ cup feta cheese, diced or crumbled

1 tsp. Dr. Cowan’s Garden Organic Threefold Blend – Savory

1/2 tsp. Dr. Cowan’s Garden Organic Dandelion Powder

Drizzle Dr. Cowan’s Garden Balsamic Vinegar
- 1-2 tsp. capers, (optional)

Drizzle Dr. Cowan’s Garden Olive Oil

pinch Dr. Cowan’s Garden Pepper Salt
- 1 Tbsp. dill, chopped (optional)

Directions for Lamb
Preheat oven to 375 degrees F.
- To a small bowl, add all the seasoning.
- Fully coat lamb chops in the seasoning.
- Place lamb on a baking tray lined with parchment paper.
- Cook for 20-25 minutes depending on how thoroughly you like your meat cooked.
- When the meat is cooked, let it rest while you prepare the salad.
Directions For Avocado Feta Salad
Chop 2 avocadoes into bitesize chunks.
- Dice or crumble feta cheese.
- To a small bowl add avocado, feta cheese, Threefold Blend Powder, Dandelion Root Powder, Balsamic Vinegar, and capers and mix gently.
- Garnish salad mixture with a drizzle of Olive Oil, Peppersalt and dill if you’re using it and serve with lamb chops.
