1 cup Artisan Handmade Fine Yellow Polenta
4 cups water
1 cup raw milk
2 tbsp butter
Pinch of sea salt
1 tsp Wild Ramp
Optional: 2 oz raw cheddar
- In a large saucepan mix the polenta, water, and salt. Allow it to sit and soak for 20-30 minutes before heating.
- Add the butter and turn heat to medium and bring to a light boil. Once boiling, reduce heat to as low as possible and simmer until all the grains have absorbed and are soft not gritty. Stir consistently throughout.
- Once the polenta is soft and creamy add the milk and continue to stir on low heat for 5-10 minutes.
- Add the cheese and stir to melt and combine.
Optional: top with your favorite beef stew recipe, baked chicken, or simply with some grated Parmesan cheese.
