Wild Ramp Polenta


1 cup Artisan Handmade Fine Yellow Polenta

4 cups water

1 cup raw milk

2 tbsp butter

Pinch of sea salt

1 tsp Wild Ramp

Optional: 2 oz raw cheddar



  1. In a large saucepan mix the polenta, water, and salt. Allow it to sit and soak for 20-30 minutes before heating.
  2. Add the butter and turn heat to medium and bring to a light boil. Once boiling, reduce heat to as low as possible and simmer until all the grains have absorbed and are soft not gritty. Stir consistently throughout.
  3. Once the polenta is soft and creamy add the milk and continue to stir on low heat for 5-10 minutes.
  4. Add the cheese and stir to melt and combine.

Optional: top with your favorite beef stew recipe, baked chicken, or simply with some grated Parmesan cheese.
