Loaded Parsnip Chips

Fall in love with this nutritious version of loaded nachos. Lightly season parsnip slices with All-Purpose Seasoning and Turmeric powder and bake them in the oven with melted ghee for approximately 15 minutes or until golden. For the toppings you’ll need: ground beef or lamb, a selection of sweet peppers, and avocado dressing made with cottage cheese and sauerkraut. Garnish your goodies with grated cheese (Pecorino Romano or Suncatcher Cheese), and your mid-week treat is complete.

1 medium parsnip, thinly sliced

1/2 + tsp Dr. Cowan’s Garden Organic Turmeric Powder
1 lb. ground beef or lamb
- 2 garlic cloves, crushed (optional)
- 1/2 cup milk (optional)

1 Tbsp. Pluck All-Purpose Seasoning
- 3 Tbsp. coconut aminos (optional)
- grated cheese (optional)
1 avocado, mashed
- 3 Tbsp. cottage cheese or sour cream

2 Tbsp. Dr. Cowan’s Garden Raw Probiotic Organic Sauerkraut – Carrot

1/2 tsp. Dr. Cowan’s Garden Wild Ramp Powder

1/4 tsp. Dr. Cowan’s Garden Sea-Vegetables Powder

6 small, sweet peppers, diced
- 1 green pepper, diced (optional)
- 1 shallot or small red onion, diced (optional)

Directions
Directions for Parsnip Chips
Pre-heat oven to 350 degrees F.
- Wash and peel parsnip and use a potato peeler or mandolin to thinly slice.
- Season sliced parsnip with melted Ghee, Peppersalt, All Purpose Seasoning and Turmeric Powder.
- Bake in the oven for appropriately 12-15 minutes or until golden.
Directions for Ground Meat
Add ground meat to a moderately heated pan.
- Add crushed garlic.
- Cook for several minutes or until no longer pink.
- Add milk to help tenderize meat (optional).
- Add Pluck All Purpose Seasoning and coconut aminos.
- Continue to cook meat for a few minutes.
- Remove from the heat and set aside.
Directions for Avocado Dressing
Add mashed avocado to a small bowl.
- Add the remaining ingredients and mix until you get your desired consistency.
Directions for Sweet Peppers
Dice sweet peppers.
- Dice green pepper if you’re using it.
- Peel and dice shallot or red onion if you’re using it.
- Add vegetables to a small bowl.
- Add remaining ingredients and mix.
Serving Instructions
Place baked parsnips on a serving plate.
- Top with cooked meat mixture.
- Add avocado dressing.
- Add sweet peppers.
- Top with grated cheese and serve.
