Salmon and Cilantro Lime Cashew Cream

Serve your baked salmon with this velvety smooth creamy sauce made with sprouted cashew nuts. It takes less than 10 minutes to blend a cup of sprouted cashew nuts with broth, dandelion powder, and a few other ingredients such as cilantro and lime juice. For a thick, pourable texture I find half a cup of liquid will do the trick, although you might want to use more liquid if you prefer a thinner consistency.

Ingredients
1 salmon fillet

1/2 tsp. Dr. Cowan’s Garden Pluck All-Purpose Seasoning

1/2 tsp. Dr. Cowan’s Garden Wild Ramp Powder

1/4 tsp. Dr. Cowan’s Garden Organic Pepper Salt

1 tsp. Dr. Cowan’s Garden A2 Ghee

1 cup Dr. Cowan’s Garden Flavored Sprouted Nuts – Leek Cashew Crunch

1 tsp. Dr. Cowan’s Garden Wild Ramp Powder (for sauce)

1/4 tsp. Dr. Cowan’s Garden Dandelion Powder

1 tsp. Dr. Cowan’s Garden Sea-Vegetables Powder
- 1/2 + cup bone broth or filtered water
- 1/4 cup cilantro, chopped
- 1+ Tbsp. lime juice
- arugula
- avocado, chopped
Directions
Directions For Salmon
Pre-heat oven to 350 degrees F.
- Place salmon on a baking tray lined with parchment paper.
- Season with all-purpose seasoning, wild ramp powder, organic pepper salt, and ghee.
- Bake for approximately 12-15 minutes or until cooked throughout. The time may vary depending on the thickness of the fish.
Directions For Cilantro Lime Cashew Cream
Add sprouted cashew nuts, wild ramp powder, dandelion powder, sea-vegetables powder, broth, cilantro and lime juice to a high-speed food processor and blend until you get your desired consistency. Do a taste test and add additional lime juice or liquid if needed.
- Pour the sauce over the salmon and serve with an arugula salad and avocado.
