Sardines with Beans and Greens (version 2)

Sardines with beans and greens is perfect for a picnic lunch or light supper. Use raw pinto beans soaked overnight, cook them in a pressure cooker, and enjoy a slightly warm bean bowl. Canned beans are also a great substitute and time-saver.

Ingredients

2 Tbsp. Balsamic Vinegar

1 tsp. Kumquat Marmalade with Honey

2 Tbsp. Olive Oil

1/2 tsp. Dr. Cowan’s Garden Organic Low-Oxalate Greens Powder
- 1/2 tsp. Dr. Cowan’s Garden Organic Carrot Powder

1/4 tsp. Dr. Cowan’s Garden All Purpose Seasoning

1/4 tsp. Dr. Cowan’s Garden Pepper Salt
- Pinch Dr. Cowan’s Garden Organic Turmeric Root Powder
- 1/2 cup pinto beans, soaked and cooked, or
- Canned sardines
- 2 sundried tomatoes, sliced, or fresh tomatoes (optional)
- Drizzle lemon juice (optional)

Drizzle Jaya Raw Fermented Probiotic Hot Sauce
Directions
To a small mixing bowl add balsamic vinegar, kumquat marmalade, and olive oil and whisk with a fork.
Add powders and whisk again. This is your dressing.
To a serving bowl, add cooked pinto beans, sardines, and tomatoes.
Drizzle dressing over bean mixture and mix.
Garnish with freshly squeezed lemon juice and fermented hot sauce and serve.
