Fish and Farro

Farro is a nutritious and quick alternative to rice. It cooks in under 10 minutes, especially when soaked overnight, and has a satisfying chewy consistency. Just like rice, you can serve it with a selection of roasted vegetables and a protein, such as mackerel fillets. Boost the flavor of your fish and farro with a touch of balsamic vinegar or fermented hot sauce and enjoy a nourishing meal.

Ingredients
1 cup farro, soaked overnight, and cooked according to package instructions
- 1 package mushrooms, sliced
- 6 organic sweet peppers, de-seeded and chopped

1+ tsp. Dr. Cowan’s Garden Organic Pepper Salt

2 Tbsp. Dr. Cowan’s Garden A2/A2 Ghee or Drizzle Dr. Cowan’s Garden Olive Oil

2 Tbsp. Dr. Cowan’s Garden Raw Probiotic Organic Sauerkraut – Carrot
-
1/2 tsp. Dr. Cowan’s Garden Wild Ramp

2 tsp. Dr. Cowan’s Garden Organic Carrot Powder

1 tsp. Dr. Cowan’s Garden Olive Paste
- 3 sundried tomatoes (optional), sliced
- 2 tins skinless and boneless mackerel fillets
- 2 avocados, diced
- 1/4 + cup feta cheese, crumbled

Drizzle Dr. Cowan’s Garden Balsamic Vinegar

Dr. Cowan’s Garden Jaya Raw Fermented Probiotic Hot Sauce
Directions
Pre-heat oven to 350 degrees F.
- 2. Slice mushrooms.
- Remove stalk and seeds from sweet peppers and cut into bite size pieces.
- Arrange peppers and mushrooms on a tray lined with parchment paper.
- Drizzle with melted ghee or olive oil.
- Season with 1 tsp. pepper salt and bake for 12 minutes or until soft.
- Prepare the farro while the vegetables cook in the oven.
- Place overnight soaked farro in a pot of water.
- Boil for 5 minutes until tender. Drain and let it cool slightly.
- Remove the cooked vegetables from the oven.
- Add farro and vegetables to a small bowl.
- Season with another dash of pepper salt and wild ramp, carrot powder, olive paste, chopped sundried tomatoes, and sauerkraut, and mix.
- Serve with chopped avocado. mackerel, and feta cheese.
- Drizzle with balsamic vinegar and/or hot sauce and enjoy.
