Sweet Potato Toast

Create this mouthwatering recipe within 30 minutes. All you need is a sweet potato, a handful of topping ingredients, and a garnish. Butter a few slices of raw sweet potato and bake them in the oven for approximately 20 minutes. When your potato slices turn a lovely golden brown, remove them from the oven and layer on your toppings. Garnish with sauerkraut, olive oil, or pepper salt, and enjoy every bite.

Ingredients
1 medium sweet potato, washed and sliced lengthwise

1 Tbsp. Dr. Cowan’s Garden A2/A2 Ghee, melted
-
pinch Dr. Cowan’s Garden Organic Turmeric Powder
-
pinch Dr. Cowan’s Garden Pluck All-Purpose Seasoning
-
pinch Dr. Cowan’s Garden Organic Pepper Salt
- 4 Tbsp. cottage cheese
- 1-inch sweet red pepper, diced (optional)
- 1/2 tsp. Dr. Cowan’s Garden Organic Dandelion Powder
- 1/2 tsp. Dr. Cowan’s Garden Organic Summer Savory Powder

1/2 tsp. Dr. Cowan’s Garden Wild Ramp Powder
-
1 Tbsp. Dr. Cowan’s Garden Sauerkraut (optional)

drizzle Dr. Cowan’s Garden Olive Oil (optional)
- 4 prosciutto ham slices
Directions
Pre-heat oven to 400 degrees F.
- Cut sweet potato lengthwise into thick slices approx. ¼ inch thick.
- Brush each sweet potato slice with ghee.
- Sprinkle on a pinch of Turmeric powder, All-Purpose seasoning, and Pepper Salt.
- Bake in the oven for approx. 20-25 minutes or until golden.
- Turn over the sweet potato after 10 mins or so and let it cook on the other side.
- While the sweet potato slices bake in the oven, prepare your topping.
- In a small bowl combine cottage cheese, some red pepper if you’re using it, Dandelion, Summer Savory and Wild Ramp powder. This is your cottage cheese topping.
- When the potato slices are golden brown, remove them from the oven.
- Place cottage cheese mixture on the slices and a slice of prosciutto ham.
- Garnish with sauerkraut, olive oil, and/or pepper salt and serve immediately.
