Crab Chowder with Ramp Powder
Crab Chowder with Ramp Powder is a delectable dish! We're confident you'll never want Chowder again without the nutritious and delicious taste of Ramp Powder!
- 1 Large Maryland Crab, boiled and shelled (reserve 2 cups of crab stock)
- 4 Russet Potatoes, parboiled
- 1 Onion, chopped
- 4 Cloves garlic, minced
- 1 Tbsp white rum
- 1 Tsp Wild Ramp Powder
- 2 Tbsp butter
- 1 Lemon, juiced
- 1 Cup heavy cream
- Salt and Pepper to taste
- Parsley, for garnish
- In a large saucepan, heat 1 tbsp butter on medium. Add the garlic and onions. Simmer until caramelized and translucent.
- Add the lemon juice and allow to reduce completely so that all liquid is evaporated. Add the rum and flambé, again allowing to reduce completely.
- Add all of the reserved crab stock and raise to a low boil. Add the parboiled potatoes and simmer until desired softness.
- Add the crab meat and Wild Ramp Powder and bring to a boil.
- Remove from heat and stir in the last tbsp of butter. Add cream and salt and pepper to taste. Serve with parsley and sea vegetable crackers.
