Crab Chowder with Ramp Powder

Preparations for Crab Chowder with Ramp Powder!  

  • 1 Large Maryland Crab, boiled and shelled (reserve 2 cups of crab stock)
  • 4 Russet Potatoes, parboiled
  • 1 Onion, chopped
  • 4 Cloves garlic, minced
  • 1 Tbsp white rum
  • 1 Tsp Wild Ramp Powder
  • 2 Tbsp butter
  • 1 Lemon, juiced
  • 1 Cup heavy cream
  • Salt and Pepper to taste
  • Parsley, for garnish

 Crab Chowder with Ramp Powder!

  1. In a large saucepan, heat 1 tbsp butter on medium. Add the garlic and onions. Simmer until caramelized and translucent.
  2. Add the lemon juice and allow to reduce completely so that all liquid is evaporated. Add the rum and flambé, again allowing to reduce completely.
  3. Add all of the reserved crab stock and raise to a low boil. Add the parboiled potatoes and simmer until desired softness.
  4. Add the crab meat and Wild Ramp Powder and bring to a boil.
  5. Remove from heat and stir in the last tbsp of butter. Add cream and salt and pepper to taste. Serve with parsley and sea vegetable crackers.
