Chocolate Granola Cookies

Satisfy your sweet tooth with these crunchy, crispy granola cookies. No baking or heavy mixing necessary. Combine good quality dark chocolate with your favorite pre-soaked granola, some seeds, and a selection of powders, and you’ve got a darn good cookie begging to be eaten. For added nutrition, add your favorite protein powder or maca powder, and perhaps a dash of vanilla extract for added flavor.

Ingredients

1 cup Dr. Cowan’s Garden Small-Batch Pre-Soaked Granola
- 1/2 cup mixed sprouted seeds (pumpkin, sunflower, and/or watermelon)

1 tsp. Dr. Cowan’s Garden Organic Winter Squash Powder

Pinch Dr. Cowan’s Garden Organic Pepper Salt
- 1 tsp. Dr. Cowan’s Garden Carrot Powder

1 tsp. Dr. Cowan’s Garden Organic Three-Beet Powder
- black or white sesame seeds (optional garnish)
- 1/2 Tbsp. maca powder (optional)
- 1 bar plain dark chocolate (72% cacao), melted
- 1/4 tsp. vanilla extract (optional)
Directions
Blend the granola and seeds in a high speed food processor for 2-3 seconds or use a pestle and mortar to crush these ingredients.
- Pour the granola mixture into a bowl.
- Stir in winter squash, pepper salt, carrot and three-beet powders. Add maca powder (optional).
- Add melted chocolate and vanilla extract (optional) to the bowl.
- Combine these ingredients until it forms a dough-like consistency. This is your cookie mixture.
- Scoop a tablespoon of the cookie mixture onto a greased cookie sheet.
- Pat down and smooth the top of each cookie with the back of a spoon.
- You should have about 9 or 10 cookies.
- Garnish cookies with sesame seeds and place in the freezer to harden.
- Store cookies in the refrigerator once hardened.
