Savory Summer Salad

Feast your eyes on this savory salad bowl. Made with spicy arugula leaves, sundried tomatoes, and tender chunks of smoked salmon fillet, this is perfect for a light lunch or dinner. Build your bowl with asparagus tips, olive paste, artichoke, and crumbled feta cheese. Garnish your warm salad with fermented hot pepper sauce, a squeeze of fresh lemon or a drizzle of balsamic vinegar.

Ingredients

Pinch Dr. Cowan’s Garden Organic Pepper Salt

1/2 tsp. Dr. Cowan’s Garden Wild Ramp Powder
- 1/4 tsp. Dr. Cowan’s Garden Sea-Vegetables Powder

1/2 tsp. Dr. Cowan’s Garden Organic Low-Oxalate Greens Powder

1/2 tsp. Dr. Cowan’s Garden Premium Biodynamic Summer Savory Powder
- 1/2 tsp. Dr. Cowan’s Garden Organic Carrot Powder
- bunch asparagus tips, steamed

1/2 Tbsp. Dr. Cowan’s Garden A2/A2 Ghee

Dr. Cowan’s Garden Balsamic Vinegar

2 tsp. Dr. Cowan’s Garden Organic Olive Paste
- 5-6 ready to eat artichokes, whole or sliced in half
- 2 smoked salmon fillets
- 2-3 sundried tomatoes, sliced (optional)
- small chunk feta cheese, crumbled (optional)
- Handful arugula leaves

Drizzle Dr. Cowan’s Garden Olive Oil or

Jaya Raw Fermented Probiotic Hot Sauce
- lemon juice (optional)
Directions
To a small bowl, add vegetable powders.
Steam asparagus tips for 4-5 minutes or until slightly tender.
Drain water.
To steamed asparagus tips, add ghee or olive oil.
Add vegetable powder mixture.
Drizzle with balsamic vinegar and olive paste, and gently toss.
To the seasoned asparagus, add artichokes, salmon fillets, feta cheese, and sundried tomatoes.
Gently mix.
Add a handful of arugula leaves to a serving bowl.
Place warm salad mixture on the bed of arugula leaves.
Garnish with fermented hot sauce or olive oil, and a squeeze of lemon juice or extra balsamic vinegar.
