Mushroom Skewers

Add a spicy kick to your mushroom skewers this summer. Brush a handful of mushrooms with a balsamic vinegar marinade and cook in the oven for a few minutes. For added flavor, brush with a sweet and spicy kumquat glaze and enjoy with a protein or incorporate into a salad or stir-fry bowl.

Ingredients
- 1 carton mushrooms, cleaned

3+ Tbsp. Dr. Cowan’s Garden Balsamic Vinegar

1/2 tsp. Dr. Cowan’s Garden All-Purpose Seasoning
- 1/4 tsp. Dr. Cowan’s Garden Organic Turmeric Powder

1/4 tsp. Dr. Cowan’s Organic Pepper Salt

1/2 tsp. Dr. Cowan’s Garden Wild Ramp Powder

1 Tbsp. Kumquat Marmalade with Honey
-
1 Tbsp. Jaya Raw Fermented Probiotic Hot Sauce

2 Tbsp. Olive Oil
Kumquat Glaze Ingredients (optional):
Directions
Pre-heat oven to 400 degrees F.
Add mushrooms to metal or wooden skewers.
Place on a baking tray.
Whisk balsamic vinegar and seasonings in a small bowl until well combined.
Brush with balsamic vinegar mixture.
Bake in the oven for up to 12 minutes or until the mushrooms release moisture.
If using kumquat glaze, whisk together in a separate bowl and set aside.
Remove mushrooms from oven and brush with kumquat glaze.
Serve with a protein.
Recipe Note
Optionally, return mushrooms to the oven for an extra 5 minutes after brushing with kumquat glaze.
