Plantain Lasagna

Have you tried plantain lasagna? It’s like regular lasagna but instead of using pasta sheets you make it with plantain. Steam, grill or bake your ripe plantain whole, or in slices. If you bake or grill the plantain for 15-20 minutes, flatten it with a rolling pin; sliced plantain can also be used to create layers. However you prepare it, this is a tasty way to enjoy a classic recipe.

1 large ripe yellow plantain, sliced and cooked
1 medium onion
- 6 garlic cloves, crushed

- 3/4 cup full fat organic milk

- Up to 1/2 cup bone broth (optional)

- 2 cups full fat milk
- 1 1/2 cups grated smoked seaside cheddar cheese or gruyere
- 1/2 tsp. grated nutmeg (optional)
- 1/2 tsp. cinnamon (optional)

Instructions For Plantain:
Cut the top and bottom of the plantain.
Peel the plantain.
Slice it into pieces and steam for 10 minutes.
Drain the water and they’re ready to be used as layers for your lasagna.
Instructions For Meat Filling:
Peel and slice the onion.
Crush the garlic.
Use moderate heat to sauté onions and garlic in a pan for a few minutes with a small amount of ghee until tender.
Add ground meat to the pan, and let it cook until it’s no longer pink.
Add a small amount of milk in parts, and let it reduce.
Continue until all the milk is finished, or until the meat is tender.
Add seasoning, vegetable powders and tomato and stir.
Do a taste test and add additional seasoning if necessary. Reduce the heat and let it simmer until you’re
If necessary, add a little bone broth and stir occasionally while it simmers to prevent sticking.
Instructions For Bechamel Sauce:
Add ghee to a moderately heated pan and let it melt.
Add flour and stir quickly.
Add milk in parts.
Continue to stir quickly until all the milk has been added.
The mixture should have a smooth custard-like consistency
Add cheese, nutmeg and cinnamon and stir.
Remove from the heat and let the mixture cool slightly.
This is your bechamel sauce.
Instructions For Lasagna:
Take a few scoops of the meat filling and line the bottom of an ovenproof dish.
Place a layer of plantains on top of the meat filling.
Repeat again.
Finish the final layer with bechamel sauce and sprinkle with grated cheese.
Bake in the oven for 20 minutes until the cheese is golden brown.
Remove from the oven and serve immediately.
Recipe Note
Tips:
Chop off the top and bottom of the plantain. Score the length of the plantain with a sharp knife about 3-4 times, this will make it easier to peel.
